My dad was born in Cuba where he learned all his cooking. For me this meant a lot of Hispanic food growing up.

I love my cultures food, so for lunch I walked over to Los Latinos, a Hispanic restaurant that serves Cuban specialties. I looked at the menu for a long...long...long...time. I couldn't decide! Eventually I made my decision, Camarones Enchilada, the interpretation of what I'm writing about.

Shrimp Enchilada: Shrimp prepared Cuban style. With a side of yellow rice and plantains.

Could of been better...
