I was stuck inside my house almost all day from the raging storms. The bright lightning plus loud thunder discouraged me from even looking outside. Eventually the frightening weather left and the sun shined bright, and just in time for my mom's safe journey home. And the best part yet...my mom suggested going out to The Cheesecake Factory for dinner!

We soon arrived and were ready to order. I usually don't have any problem ordering at The Cheesecake Factory, but I was in search of something without meat. After a while I found an item a bit rare...at least it did not have meat!

The Incredible Grilled Eggplant Sandwich: Grilled Japanese eggplant, roasted red peppers, red onion, melted Mozzarella and garlic Aiole on our toasted bun. Served with fries.

I wish I made room for dessert!
